Georgia Pecan Snap Cookies

  • 1/2 cup lowfat cottage cheese 1% fat
  • 1 apple
  • 2 tablespoons sugar
  • 30 gingersnaps
  • 3/4 cup Georgia pecans, chopped

Core apple. Then use food processor to shred apple or use grater to shred. Blend cottage cheese in blender or food processor until smooth. Blend in apple, sugar, and pecans. Using a rubber spatula spread apple filling onto flat side of gingersnap, topping it with another gingersnap to make a sandwich.
