Q. Does roasting Georgia pecans in the oven have any effect on their nutritional value?  
A. If you’re roasting them au naturel without adding butter, honey or any kind of glaze, then the nutrition numbers for roasted pecans are the same as for raw, shelled pecans (rich in vitamin E, zinc, fiber, antioxidant compounds and heart-healthy monounsaturated fats).

Pecans that have been brushed with butter and/or sugar and then roasted, however, can provide many more calories than fresh roasted pecans.

To get all the great nutrition without all the extra fat and calories, follow these simple instructions on how to roast the perfect Georgia pecan:

  • Preheat the oven to 300 degrees.
     
  • Place ½ cup of shelled pecans on a baking sheet in a single layer.
     
  • Roast for approximately 7 minutes.
     
  • Check toward the end, to be sure they don’t burn.

After cooling, you can serve them as is at get-togethers or freeze them (whole or chopped) for use in recipes.
